2023 Madison Herb Fair Speaker Information

10:30-11:30 a.m. - Gathering Wild Through the Seasons

    Sam Thayer of Forager’s Harvest 

Foraging wild herbs and vegetables is a practical way to enhance the culinary and nutritional variety of your diet. Expert forager Sam Thayer will present the seasonal rounds of a gatherer, from early spring greens through the shoots and flowers of late spring, the berries and hot-weather greens of summer, to the fruits and roots of autumn. With several examples of gatherable goods for each, he’ll talk about where to find them, how to identify them, what parts to use, and cooking and storage tips. Thayer’s books will be available for purchase and signing.


Sam Thayer is a renowned Wisconsin author and forager and internationally recognized authority on edible wild plants. His books include The Forager's Harvest, Nature’s Garden, Incredible Wild Edibles, and Sam Thayer's Field Guide to Edible Wild Plants of Eastern and Central North America.

12:30-1:30 p.m. The Celestial Garden: Growing Herbs, Vegetables, and Flowers in Sync with the Moon and Zodiac

Jane Hawley Stevens of Four Elements Herbals 

The ancient agricultural practice of gardening by the moon and stars can guide when it is most effective to plant, weed, and harvest. Join Jane Hawley Stevens to learn the art and science of these practices from her 36 years of experience as an organic herb farmer, and celebrate the release of Jane’s new book, The Celestial Garden: Growing Herbs, Vegetables, and Flowers in Sync with the Moon and Zodiac.

  

Jane Hawley Stevens began specializing in herbs in 1981 and founded her business in 1987. Four Elements Organic Herbals creates products from plants grown in cultivated fields, chakra garden, prairie, and woodlands on her farm in the pristine Baraboo Bluffs.

Kevin Olson of Northwoods Tea & Herb 

Whether you grow herbs and mushrooms at home, or forage for wild herbs and fungi, it’s essential to harvest and handle these ingredients properly to capture their flavor and nutrients. Join Kevin Olson of Wausau-based Northwoods Tea & Herb to learn when to harvest based on the life cycle of plant species; best practices for processing, drying, and storage; and how to avoid damage to local ecosystems when foraging.

2023 Madison Herb Fair Set for November 4

“Herbal Seasons and Cycles” is the theme of the 41st annual Madison Herb Fair sponsored by the Madison Herb Society. It takes place Saturday November 4, 2023, 10 a.m. to 4 p.m., at Olbrich Botanical Gardens, 3330 Atwood Avenue in Madison. Admission is free.


Featured speakers are scheduled throughout the day in the Olbrich Gardens Learning Center.


10:30 a.m. Gathering Wild Through the Seasons Noted Wisconsin wild foods expert Sam Thayer will speak about how foraging wild herbs and vegetables through the year is a practical way to enhance the culinary and nutritional variety of your diet, from early spring greens through the shoots and flowers of late spring, the berries and hot-weather greens of summer, to the fruits and roots of autumn. Thayer’s books will be available for purchase after his talk.


12:30 p.m. The Celestial Garden: Growing Herbs, Vegetables, and Flowers in Sync with the Moon and Zodiac Jane Hawley Stevens of Four Elements Herbals, an award-winning organic farmer, will explain how the ancient agricultural practice of gardening by the moon and stars can indicate the most effective times to plant, weed, and harvest. Steven's newly published book, The Celestial Garden, will be available for purchase at the Four Elements booth throughout the day.

A herbal marketplace features two rooms of regional small businesses showing their wares, including herb and spice blends; loose leaf and herbal teas; herb plants; baked goods, syrups, chili pepper products and superfood truffles; wreaths, ceramics and plant-inspired art; herbal neck wraps and eye pillows; soaps, balms, liniments and other body products; essential oils, sprays and aromatherapy products; tinctures, salves and herbal remedies; dog-care products and catnip toys; many gift items; and books about herbal uses, gardening, foraging, and cooking.


“As we enter the winter months, this is a great time to think about herbal uses through all the seasons,” said Joyce Pohl, president of the Madison Herb Society. “In addition to our three scheduled speakers, our knowledgeable vendors are happy to share ideas for ways to use herbs for cooking and baking, pet care, personal health and relaxation, gardening, home décor, cleaning and so much more. And, of course, anyone interested in herbs is invited to join the Madison Herb Society.”


The Madison Herb Society is a non-profit membership organization that promotes education about the culture and use of herbs, including their global history and use for culinary, medicinal, horticultural and decorative purposes. Throughout the year, the society sponsors speakers, workshops, field trips, garden tours and themed potluck meals. Interested visitors are invited to become members of the Madison Herb Society at the Fair.

9:30 a.m. - Herbs in the Kitchen or the Botanical Garden

From the garden space to the kitchen table, herbs fill an important role in creating excitement and depth in aroma and flavor. Learn how to preserve the harvest and make craveworthy dishes that highlight fresh and dried herbs with Christy and Katie from Pasture and Plenty.

Pasture & Plenty is a Madison meal-kit service and farm-to-table deli 

& catering company that works with more than 40 regional 

farms, creameries, bakeries, brewers and distillers, coffee roasters, 

and tea blenders. 


Christy McKenzie is the owner of Pasture and Plenty, a food business with a specialty market and deli, demonstration kitchen, and a meal kit pick-up and delivery service. P&P gives the community access to healthy, locally-sourced meals and food products. She weaves in a mission to create and connect community around food systems issues: food equity, access and agency. She is an owner-partner in Edible Madison, and a sometimes writer.

Katie Ankowtiz is the Meal Kit and Food Manufacturing Sous Chef at Pasture and Plenty. As an herbalist, with a degree in Plant Science and a farming background, she brings a deep passion for integrating the bounty of local harvests into meals for our community.

Join 30-year veteran herbalist Linda Conroy as she shares stories about some of the community herbal projects that she has seen as well as participated in over the years. This sharing will inspire, educate and provide both a current as well as a historical view.

Join Olbrich Botanical Gardens' Herb Garden horticulturist, Erin Presley, as she shares her best tips for success, even when limited by time, space, or experience. We will cover basics like starting from seed versus buying plants, site selection and growing in containers, choosing varieties, how and when to harvest and store herbs, and easy recipes. Even experienced herbies might take away a new trick or two! 

Followed by an outdoor tour of Olbrich's herb garden at 2:30 p.m.

2022 Madison Herb Fair Set for November 5

“Easy Herbs for Everyone” is the theme of the 40th annual Madison Herb Fair sponsored by the Madison Herb Society. It takes place Saturday November 5, 2022, 9 a.m. to 3 p.m., at Olbrich Botanical Gardens, 3330 Atwood Avenue in Madison. Admission is free.


SPEAKERS

9:30 a.m. - Herbs in the Kitchen or the Botanical Garden  From the garden space to the kitchen table, herbs fill an important role in creating excitement and depth in aroma and flavor. Learn how to preserve the harvest and make craveworthy dishes that highlight fresh and dried herbs with chefs Christy and Katie from Pasture and Plenty.


11:30 a.m. - Honoring Herbs and Community Venice Williams will explore some of the many ways herbs are cultivated, honored, and used at Alice's Garden Urban Farm in Milwaukee. She will bring examples of such usage, explain how an herbal labyrinth at the garden helps with healing in the community, and share what she learned from creating a successful urban herbal apprentice program.


1:30 p.m. - Tips and Tricks for the Aspiring Herbie Herbs add an unparalleled richness to daily life, giving much in return to even modest gardening efforts. Join Olbrich Botanical Gardens' Herb Garden horticulturist, Erin Presley, as she shares her best tips for success, even when limited by time, space, or experience. She will cover basics including starting from seed versus buying plants, site selection and growing in containers, choosing varieties, how and when to harvest and store herbs, and easy recipes. Even experienced herbies might take away a new trick or two!  Followed by outdoor Q&A in Olbrich’s Herb garden, 2:30–3:30 p.m.


HERBAL MARKETPLACE

A herbal marketplace features 20 regional small businesses showing their wares, with such offerings as dried herbs and spice blends; loose leaf and herbal teas; herb plants; baked goods, syrups, chili pepper products and superfood and CBD truffles; wreaths, ceramics and plant-inspired art; herbal neck wraps and eye pillows; soaps, balms, liniments and other body products; essential oils, sprays and aromatherapy products; tinctures, salves and western and Chinese herbal remedies; catnip toys and many gift items; and books about herbs, gardening and cooking.


“There are so many wonderful uses for herbs, whether to add flavor to food, soothe the mind and body, create enticing aromas, bring pollinators to the garden, or decorate your home,” said Joyce Pohl, president of the Madison Herb Society. “We welcome everyone to discover easy ways to bring herbs into your life.”


The Madison Herb Society is a non-profit membership organization that promotes education about the culture and use of herbs, including their global history and use for culinary, medicinal, horticultural and decorative purposes. Throughout the year, the society sponsors speakers, workshops, field trips, garden tours and themed potluck meals. Interested visitors are invited to become members of the Madison Herb Society at the Fair.
