Sam Thayer of Forager’s Harvest
Foraging wild herbs and vegetables is a practical way to enhance the culinary and nutritional variety of your diet. Expert forager Sam Thayer will present the seasonal rounds of a gatherer, from early spring greens through the shoots and flowers of late spring, the berries and hot-weather greens of summer, to the fruits and roots of autumn. 2023 Madison Herb Fair Set for November 4
“Herbal Seasons and Cycles” is the theme of the 41st annual Madison Herb Fair sponsored by the Madison Herb Society. It takes place Saturday November 4, 2023, 10 a.m. to 4 p.m., at Olbrich Botanical Gardens, 3330 Atwood Avenue in Madison. Admission is free.
Featured speakers are scheduled throughout the day in the Olbrich Gardens Learning Center.
10:30 a.m. Gathering Wild Through the Seasons Noted Wisconsin wild foods expert Sam Thayer will speak about how foraging wild herbs and vegetables through the year is a practical way to enhance the culinary and nutritional variety of your diet, from early spring greens through the shoots and flowers of late spring, the berries and hot-weather greens of summer, to the fruits and roots of autumn. Thayer’s books will be available for purchase after his talk.
12:30 p.m. The Celestial Garden: Growing Herbs, Vegetables, and Flowers in Sync with the Moon and Zodiac Jane Hawley Stevens of Four Elements Herbals, an award-winning organic farmer, will explain how the ancient agricultural practice of gardening by the moon and stars can indicate the most effective times to plant, weed, and harvest. A herbal marketplace features two rooms of regional small businesses showing their wares, including herb and spice blends; loose leaf and herbal teas; herb plants; baked goods, syrups, chili pepper products and superfood truffles; wreaths, ceramics and plant-inspired art; herbal neck wraps and eye pillows; soaps, balms, liniments and other body products; essential oils, sprays and aromatherapy products; tinctures, salves and herbal remedies; dog-care products and catnip toys; many gift items; and books about herbal uses, gardening, foraging, and cooking.
“As we enter the winter months, this is a great time to think about herbal uses through all the seasons,” said Joyce Pohl, president of the Madison Herb Society. “In addition to our three scheduled speakers, our knowledgeable vendors are happy to share ideas for ways to use herbs for cooking and baking, pet care, personal health and relaxation, gardening, home décor, cleaning and so much more. And, of course, anyone interested in herbs is invited to join the Madison Herb Society.”
The Madison Herb Society is a non-profit membership organization that promotes education about the culture and use of herbs, including their global history and use for culinary, medicinal, horticultural and decorative purposes. Throughout the year, the society sponsors speakers, workshops, field trips, garden tours and themed potluck meals. Interested visitors are invited to become members of the Madison Herb Society at the Fair.

P&P gives the community access to healthy, locally-sourced meals and food products. She weaves in a mission to create and connect community around food systems issues: food equity, access and agency. She is an owner-partner in Edible Madison, and a sometimes writer.
Katie Ankowtiz is the Meal Kit and Food Manufacturing Sous Chef at Pasture and Plenty. As an herbalist, with a degree in Plant Science and a farming background, she brings a deep passion for integrating the bounty of local harvests into meals for our community.

Join Erin Ulrich from Telsaan Tea of Mount Horeb, Wisconsin, as she speaks about teas, herbal tisanes, and tea blends. She’ll talk about the types of tea, where they originate, and how you can get started exploring flavors and blends from this wide and wonderful world.
During the pandemic, chef Patrick O’Halloran (Lombardino’s Restaurant) and partners started The Deliciouser, a Madison business that creates small-batch blends of herbs and spices and specialty salts. Patrick will demonstrate how you can use herbs and spices to create delicious meals at home.
Join herbalist Linda Conroy from Moonwise Herbs (near Stoughton, Wisconsin) for an outdoor botanical walk through the Olbrich Gardens grounds. While the plants may seem dormant, there is still plenty to observe and marvel at. Linda will introduce you to herbs and wild plants useful in the kitchen and for wellness.
Join herbalist Jane Hawley Stevens from Four Elements Herbals in North Freedom, Wisconsin, as she speaks about herbal nervines. Nervines are herbs that support the nervous system, reducing stress, muscle tension, and insomnia and promoting healthy nerve function. Jane was honored as the 2020 Midwest Organic Farmer of the Year.

Our theme is HERBS IN FERMENT.
Our featured speakers will present varied perspectives on herbs in fermented foods and beverages, and on their pleasures and benefits. We also will have some mini-sessions with local creators of herbal products.

Linda Conroy of Moonwise Herbs is a practicing herbalist, providing herbal education, workshops, apprenticeships and individual consultations. She is the founder of the Midwest Women's Herbal Conference.
Chef Elena Terry of Wild Bearies Catering draws on Ho-Chunk food traditions and her culinary training to demonstrate uses of our native herbs, such as juniper berries, sage, wintergreen, and sumac.
Jean Schneider of Nativa Medica will teach us how to prevent and treat bites, as well as how to use local herbs as tinctures and teas to recover from an infection. Most of these herbs can be used along with treatments prescribed by your doctor. Handout with medicinal herb information provided.
